Maple Goodness


maple butternut purée


A great alternative to sweet potatoes! A food processor will help to get the mixture silky smooth. 

PREP TIME: 10 mins

TOTAL TIME: 25 mins

SERVING: 4 (serving size: 2/3 cup)



4 cups cubed peeled butternut squash
3 Tbsp. Fulton's Organic Maple Syrup
1 Tbsp. unsalted butter
1 tsp. grated peeled fresh ginger
salt & pepper to taste
1 grated clove of garlic

4 tsp. roasted unsalted pumpkin seeds (pepitas) for topping



Bring a large saucepan filled with water to a boil. Add the butternut squash cubes; cook 10 minutes or until tender. Drain.

Place cubed peeled butternut squash in a food processor with Fulton's Organic Maple Syrup, butter, ginger, salt & pepper and garlic. Process until smooth. 

Top with roasted pumpkin seeds.
