Gourmet Maple Flax Rice Pudding

This nutritious rice pudding recipe transforms regular rice pudding into a gourmet omega crunch dessert!
3/4 cup jasmine rice, uncooked (or other long grain white rice)
1 1/2 cups water
1/4 cup dried fruit (raisins or cranberries work best)
2 Tbsp brandy (or black spiced rum)
2 cups 2% milk
1/4 cup sugar
4 Tbsp Fulton's Organic Maple Syrup
2-4 Tbsp Omega Crunch Roasted Maple Shelled Flax
1 tsp vanilla
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
Dash ground cloves
1 Tbsp butter
Soak the dried fruit in the brandy while cooking the rice. Drain any excess liquid from the fruit after about 20 minutes.
To cook the rice: Combine the rice and water in a pot. Bring it to a boil, and let simmer for about 20 minutes on low heat until all the water gets absorbed. Stir in 1 3/4 cups of the milk, sugar, maple syrup, vanilla, and salt. Let it come to a boil and simmer over medium-heat for about 15 minutes until the mixture becomes thick and creamy. Add the remaining milk, Omega Crunch Roasted Maple Shelled Flax, nutmeg, cinnamon, cloves, and butter.
Cook for another 5 minutes on low-heat. Mix in the brandy soaked fruit and garnish with sprinkled cinnamon. Serve warm or cold.
