Bean and Maple Syrup Bars

250ml Fulton’s Granulated Maple Sugar
125ml butter, room temp
375ml canned white pea beans, drained and rinsed
150ml Fulton’s Organic Maple Syrup
125ml brown sugar
125ml melted butter
250 ml chopped pecans
60 gram semi-sweet chocolate melted
Preheat oven to 350F. In a food processor or mixing bowl, combine the flour and Fulton's Granulated Maple Sugar. Add the butter pieces and pulse or cut in until crumbly. Transfer into a greased 9x13 pan and press evenly into bottom. Set aside.
In a food processor or blender, puree beans and Fulton's Organic Maple Syrup. When smooth add the eggs, sugar, butter and blend well. Sprinkle chopped pecans evenly over base then pour filling over the top.
Bake for 30 minutes or until set in the middle and lightly browned. Cool to room temperature.
In a double boiler, melt chocolate over barely simmering water. Drizzle chocolate over bars in a criss-cross pattern. Refrigerate the bars until the chocolate has set. Cut bars into triangles and garnish each one with a pecan half.
